In case some of you would be interesed in beating him, here some tips to increase your fighting skills and chance of succeeding:
First of all, be sure the fight mode is set to 'keyboard', that you got a pencil and lots of paper sheets and save your game just before the fight begin, it will avoid you to pass the conversation again and again.
Do not bersek. Throwing small punch as fast as you can might work on every other guards but it doesn't work with Hans. From what I've learn these 2 last days, opponent got more chance to punch you while you're hitting 'em and since it's impossible to know where they will strike while you're punching 'em to death, you can't block their punch, and most of the time, they strike back just after you punch 'em, so you're better to keep blocking and punch only when your punch bar is full than giving too much chance to your opponent to hit you.
Work on your blocking skills. Hans got a big punch bar and usually strike when his bar is full, so he just has to punch you 3 times to knock you. Better to lose 1 - 2 pixels of health while blocking than 1/3 of your health. (In case some of you doesn't know where to block, look at the enemy fists, they indicate where the guard plan to strike, if his arm are raised near his neck, he'll punch you in the face (high), if they are a bit under his neck, he'll punch you in the chest (med), if his arm are nearly horizontal (like in the second screenshot) he'll punch you in the belly (low).)
Since you saved the game before the fight begin, the fight will always begin the same way. If Hans raise his hand to punch you in the face at the begining of the fight, everytime you'll load your game, prepare yourself to block high. This is where the pencil and sheets will be useful. After 2 days, I saw that the fight was always begining the same:
Hans prepares to punch HIGH - I block HIGH.
Hans prepares to punch LOW - I block LOW and (my punch bar being full) punch him in the faces...
IF I punch him 3 times
THEN Hans will prepares to punch HIGH (I block his punch), will prepares to punch MED (I block again), will prepares to punch LOW (I block and, my punch bar being full, punch HIGH). END
ELSE... IF I punched him 4 or 2 times
THEN Hans will prepares to punch HIGH then LOW (4) or Hans will prepares to punch MED, then HIGH, then LOW (2)... END
END.
See what I mean? It's not the random which will determinate his move, he's programmed like this. So do like I did, take your pencil and note his moves. Once your punch bar is full, try to punch him only once in the face, if he strike back, load your game, and instead punch him twice in the face or try to punch somewhere else. You'll eventually find a way to punch him without he strike you back. Once you find how many punch and where you need to strike, note it on the sheet... After some minutes, you'll already have a list telling you where to block, how much punch and where to strike, then where to block again... It won't be long until you discover you're able to make him lose half of his health bar on every game before he got the chance to knock you.
To help you in the making of your list, when you see you did a wrong move, or lost health in the begining of the fight, press 0 on the num. pad to automaticly knock the guard, then you'll be able to access the load game screen faster than waiting until he kill you, then waiting for the game-over screen to appear until you can load your game.
Once his health bar will be a bit smaller than twice his punch bar, if you succeed to punch him with a full punch bar, his health's color will pass from green to yellow and if you punch again, from yellow to red and the size won't be bigger than 4 pixels. This part is critical, the changes of the music, the fact he'll maybe step back, the size and color of his health bar and the fact you're still able to receive 2 punchs before being knocked might give you some overconfidence you can beat him or make you more nervous and turn you into a punching berseker, which must not happen 'cause you're about to beat him and the fighting choregraphy[?] is begining to be really complex (by memorizing the latest moves you'll probably do more errors in the begining of the fight than in the end). What I suggest you to do is to stay calm and use the old Last Crusade's Hit&Run fighting tip: Punch your opponent, then step back, by the time the enemy will move in front of you, your punch bar will be ready, so punch again, then step back... (Just watch out to not leave the fight.)

Anyway, It's been probably 3 or 4 weeks I want and I need to tell this to anyone, and since a picture worth a thousand words...

Ok, before beating him, you MUST set the fighting mode on the keyboard, I don't know if ScummVM can handle the keyboard fight but if it can't, I suggest you to download and play the game using DOSBox ( http://dosbox.sourceforge.net/ ). You'll also need a pencil and a piece of paper, don't worry you won't have to write a complete choregraphy on it, you'll just need to write 3 or 4 numbers.
An interesting note about this fight: Once you know how to beat him, it's the easiest 'expert' guard to beat. In fact it only took me 2 hours to beat him, compared to the 4 days I passed to beat Hans, and you won't need any blocking skills. You remember when I said this guy was probably impossible to beat, 'cause no matter if you blocked or not, you still lost health? I was damn stupid, it was so obvious, when Arnold is punching, just STEP BACK! He's gonna punch in the air, missing you completly. :-)
Ok, here's what you need to do...
First, get a savegame. What I mean by this? In the Hans walkthru, I already told that when you save your game 1 or 2 seconds before a fight, the fight will always always always be the same AS LONG you do the EXACT SAME moves at the EXACT SAME moment.
How to get your savegame:
1) Save your game when you first meet Arnold, once the game gives you the chance to say something.
2) Now the game is saved, follow the same conversation writen below:
Arnold: Know any good drinking tunes?
Indy: Maybe. Let me think.
Choose: "Nope, I can't help you." (Choice #4)
Arnold: What a shame.
Arnold: Now I'll have to amuse myself by tearing your head off.
Choose: "Wait, let me try again." (Choice #4)
Arnold: Too late.
It can sound stupid but it might be important to follow the same scheme, I'm gonna tell you why later.
3) While Arnold say "Too late", save your game on a DIFFERENT SLOT than the one used on step 1.
4) Ok, once the saving is complete, the fight should begin. Now I want you to step front and punch Arnold in the face repeatly and non-stop. When you start punching, I want you to count how many times you can punch him before he makes you lose any health. Arnold is damn slow, and If you can punch him around 20 times or more in the face on your first strike, without losing any health, It's damn great! Else, if you can't, load the step 1 savegame and repeat the step 2, 3 and 4 until you get a 20 punchs or more savegame.
Ok, now you've succeed to punch him 20 times, everytime you'll load the savegame you took on step 3, it will always be the same fight, so you'll be able to punch him 20 times or more everytime. Now I want you to count exactly how many time you can punch him before he finally get you. Once you get the number, write it on the piece of paper.
Now you know that when you'll reach the punch number on the piece of paper, Arnold is going to punch you. So when you reach the number minus 1 punch, step back (If the number is 20, then after your 19th punch, step back.). Arnold will punchs in the air, miss you, then steps front. Once he's in front of you, start punching him in the face, repeatly and non-stop, and count how many times you can punch him before he hits you. Once you know how many times you can punch him, write it on the paper.
So now you got 2 number, mine were 20 and 28, so when the fight began, I punched him 19 times, and after the 19th punch, I stepped back. He punched in the air and stepped front. Then I was able to punch him 27 times in the face, and after the 27th punch, I stepped back. Again he punched in the air, missed and stepped front. Once he was in front of me, I started to punch him again, counting how many punch I was able to throw before his next strike. Once I got the third number, I loaded my savegame and repeated the fight, and on the third number, I stepped back. He missed his punch. He stepped front. I restarted to punch in the face... The same patern, until he finally fell on the ground.
It's just that simple. After 2 hours, Arnold was on the ground, and I celebrated the events by saving the game on a save labeled "I KIIKIIKILLLLEDDDD ARARAARARANOOLLLLDDD!!!!! ", typed with my hands still shivering 'cause of the emotion. Then I took a printscreen of the scene, made a wallpaper with it and kept it during an entire month.
Well, I tell you how I did it. It's now your turn to beat him. :-)
On a side note, there's something you must know about the fight in FOA:
The fighting skills (punch bar size, fighting speed, blocking skills...) of the soldiers are determinated by the sentence you'll say before the fight, some sentences are insulting and make 'em harder to beat while some sentences are distracting and make 'em easier to beat. If you can't beat a soldier at first or second trial, try a different sentence to find the best one. In fact, with Hans, if you say "I can't seem to find my tour group. Can you help me?" before the fight, his punch bar will be 1/3 smaller than normal (4 punchs required to kill Indy, instead of 3), and his fighting speed will be slower. Just verify yourself:
